Ingredients:

| can | White or yellow hominy, 14oz | | 4
| | Eggs, beaten | | 8
| oz | Chorizo or pork sausage | | | . cooked and drained | | 3/4
| cup | Cheddar cheese, shredded | | 1/2
| cup | Green onion, sliced | | 1
| can | Green chilies, chopped, 4oz |

Procedures:
| 1 | Preheat the oven to 350 degrees. | | 2 | Grease a 9-inch glass baking dish. | | 3 | In a large bowl combine the hominy, eggs, chorizo, cheese, onion and chilies if desired. | | 4 | Pour into the prepared dish. | | 5 | Bake for 30 to 35 minutes or until set. | | 6 | Let stand for 5 minutes before serving |
