Ingredients:

| tbsp | Butter or margarine | | 1
| tbsp | Italian seasoning | | 2
| tsp | Sugar | | 1
| lbs | Cubed ham | | 4
| each | 16 oz cans black-eyed peas | | | Drained |

Procedures:
| 1 | Cook onion and celery in butter until tender. | | 2 | Add rice and water, bring to boil, reduce heat and simmer (covered) for 45 minutes. | | 3 | Add remaining ingredients and cook in slow oven (225°F) for 1-2 hours. | | 4 | Enjoy with cornbread for good luck as your first meal on new year"s day!! |
