Ruth's peppermint pinwheels

Ingredients:
2 1/2 cupAll-purpose flour
1/4 tspSalt
1 cupButter or margarine
1 cupSifted powdered sugar
1 Eggs
1 tspVanilla
1 tspAlmond extract OR
3/4 tspPeppermint extract
1/3 tspRed food coloring
1 Egg white
1 tbspWater
1/4 cupHard peppermint candy*
Procedures:
1* candy should be finely crushed ~------------------------------------------------------ ~---------------- stir together the flour and salt.
2Beat margarine or butter in a mixer bowl for 30 seconds.
3Beat in powdered sugar till fluffy.
4Add egg, vanilla, and extract; beat well.
5Add the dry ingredients.
6Beat till just combined.
7Divide dough in half.
8Mix food coloring into one portion of dough.
9Chill dough 1 hour or till easy to handle.
10Divide each portion of dough in half.
11On lightly floured surface roll out each of the four balls of dough to form an 8" square.
12Place a white square of cookie dough on top fo a red square of cookie dough.
13Roll up, jelly roll style.
14Repeat with remaining dough.
15Wrap the rolls in waxed paper and chill 2 to 24 hours.
16Cut dough into ? thick slices.
17Place on ungreased cookie sheets.
18Bake in a 375°F.
19Oven for 8 to 10 minutes or till edges are firm and bottoms are light brown.
20Remove cookies and cool on wire racks.
21Beat together egg white and water; brush over warm cookies.
22Sprinkle with crushed peppermint candy.
