Rice cooler -- horchata

Ingredients:
1 cupUncooked rice
4 1/2 cupWarm water
3/4 cupSugar
1 tspVanilla extract
Procedures:
1Place rice in a large bowl.
2Pour warm water over rice.
3Set aside an soak six hours or overnight.
4Pour into blender jar; process until smooth.
5Strain mixture through a fine mesh sieve.
6Return to blender, process again.
7Strain mixture into pitcher through a clean dampened dish towel or cheese cloth.
8Rinse blender, return mixture to blender; add sugar and vanilla.
9Process until combined.
10Refrigerate until chilled.
11Serve over cracked ice.
12Variations: chocolate -- add 2 ounces grated mexican chocolate to rice.
13Continue as directed above.
14Strawberry -- prepare as directed above, adding 1 package (10 ounces) frozen strawberries with the sugar and vanilla.
15Continue as directed.
16Cinnamon -- add 2 (4-inch) cinnamon sticks to rice.
17After soaking remove cinnamon sticks and discard.
