| 1 | Place rice in a large bowl. |
| 2 | Pour warm water over rice. |
| 3 | Set aside an soak six hours or overnight. |
| 4 | Pour into blender jar; process until smooth. |
| 5 | Strain mixture through a fine mesh sieve. |
| 6 | Return to blender, process again. |
| 7 | Strain mixture into pitcher through a clean dampened dish towel or cheese cloth. |
| 8 | Rinse blender, return mixture to blender; add sugar and vanilla. |
| 9 | Process until combined. |
| 10 | Refrigerate until chilled. |
| 11 | Serve over cracked ice. |
| 12 | Variations: chocolate -- add 2 ounces grated mexican chocolate to rice. |
| 13 | Continue as directed above. |
| 14 | Strawberry -- prepare as directed above, adding 1 package (10 ounces) frozen strawberries with the sugar and vanilla. |
| 15 | Continue as directed. |
| 16 | Cinnamon -- add 2 (4-inch) cinnamon sticks to rice. |
| 17 | After soaking remove cinnamon sticks and discard. |
| 18 | Continue as directed above. |
