Ingredients:

| cup | Sugar | | 2
| cup | Vegetable shortening | | 2
| cup | Cooked pumpkin | | 4
| oz | Tofu, beaten | | 2
| tsp | Vanilla extract | | 4
| cup | All purpose flour | | 2
| tsp | Baking soda | | 1
| tsp | Salt | | 1
| tsp | Grated nutmeg | | 1/2
| tsp | Ground allspice | | 2
| cup | Raisins | | 1
| cup | Chopped walnuts |

Procedures:
| 1 | Preheat the oven to 350°F. | | 2 | Grease a large cookie sheet. | | 3 | In a large bowl, cream together the sugar and shortening. | | 4 | Add the pumpkin, tofu, and vanilla and beat until smooth. | | 5 | In a separate bowl, combine the flour, baking soda, salt, nutmeg and allspice. | | 6 | Slowly add the dry ingredients to the pumpkin mixture, small amounts at a time, until completely mi8xed together. | | 7 | Stir in the raisins and walnuts. | | 8 | Drop tablespoonfuls of the dough roughly 2 inches apart on the cookie sheet. | | 9 | Bake 12 to 15 minutes, until golden brown. |
