Ingredients:
20 Chiles, aji, yellow, chopped
-substitue yellow wax hot
-chiles or jalapenos
1/4 cupOil, olive
1 Garlic clove, minced
2 tbspVinegar
1 tspSalt
HEAT SCALE - HOT
Procedures:
1Remove seeds and stems.
2Combine all ingredient in a food processor and puree to a fine paste.
3This is a hot condiment.
4This south american chile paste can be used as a substitute whenever fresh chiles are called for.
5It will keep for two weeks or more in the refrigerator.
6For longer storage, increase the vinegar and reduce the amount of olive oil.
