Ingredients:
4 Boneless pork chops
- cut into ?inch cubes
2 tspGround cumin
1 tspGround cardamom
1 tspGround cinnamon
1 tspGround coriander
1 tspGround mace
1/2 tspPepper
1/4 tspSalt
1 tbspVegetable oil
2 largeOnions, chopped
3 Garlic cloves, minced
3/4 cupBeef broth
3 tbspHoney
2 tbspLemon juice
8 ozNonfat plain yogurt
2 tbspFlour
1/4 cupChopped parsley
2 cupHot cooked rice
OPTIONAL
Sliced almonds, toasted
Mandarin orange sections
Procedures:
1Indian cuisine often blends sweet honey and savory spices, as in this recipe.
2In a plastic or paper bag combine cumin, cardamom, cinnamon, coriander, mace, pepper and salt.
3Add pork cubes; shake until pork is coated with spice mixture.
4Set aside.
5In a large skillet, heat oil over medium-high heat.
6Cook and stir onions and garlic until tender but not brown.
7Add pork to skillet.
8Cook and stir pork for 2-3 minutes or until browned.
9Stir beef broth, honey and lemon juice into skillet.
10Bring to boiling; reduce heat.
11Cover and simmer about 10 minutes or until pork is tender, stirring occasionally.
12In a small bowl combine yogurt and flour; add to skillet.
13Stir in parsley.
14Cook over medium heat, stirring constantly, until mixture thickens.
15Spoon pork mixture over rice.
16If desired, sprinkle with almonds and garnish with mandarin orange segments.
