Ingredients:
1 tbspGarlic, minced
1 tbspGreen onions, minced
2 cupShiitake mushrooms, sliced
2 tbspOil
1 tspOregano
1/2 tspThyme
1/2 tspBasil
2 tbspBalsamic vinegar
2 tbspTamari
1 cupChickpeas, cooked
1 cupCouscous, cooked
1 cupQuinoa, cooked
1/2 cupLiquid egg substitute
1/4 cupSpelt flour
Black & white pepper, to
-- taste
1/4 cupBreadcrumbs
Procedures:
1Heat oil & saute garlic, green onions & shittake mushrooms.
2Stir in the herbs, vinegar & tamari, & cook for another 3 minutes.
3Transfer to a blender or food processor.
4Add the chickpeas & puree.
5transfer pureed mixture to a large mixing bowl & mix in the couscous & quinoa.
6Stir in the egg replacer & spelt flour.
7Season.
8divide mixture into 4 equal portions & shape into patties.
9Coat with breadcrumbs.
10Place in oven & broil until lightly browned on both sides.
11Serve on buns with any fixings you might desire.
