Western tofu scramble

Ingredients:
1 packMori-Nu silken firm tofu
-crumbled (10.5 oz)
2 tspMargarine
1/4 cupGreen onion, chopped
3/4 cupRed pepper, in julienne
-strips
1 cupMushrooms, sliced
1 1/2 medPotato
3 tbspPicante sauce
Turmeric
Procedures:
1Microwave potato for 5-6 minutes or use baked potato.
2Cool and slice thin.
3add crumbled tofu to melted margarine in teflon skillet.
4Add 2 dashes of turmeric and cook on high for 5 minutes.
5add vegetables and potato and cook 5 minutes or until vegetables are tender crisp.
6stir in picante sauce and serve.
7makes two 1 1/3 cup servings.
