| tsp | Garlic, chopped | | 4
| tbsp | White onions, chopped | | 1
| tbsp | Tomato paste | | 2
| lbs | Tomato concasse | | 2
| | Tomatoes, large | | 1
| x | Salt | | 1
| x | Pepper | | 1
| tsp | Basil leaves, chopped | | 4
| tbsp | Cream, whipping | | 4
| tbsp | Gin | | 2
| tbsp | Sour cream | | 8
| | Basil leaves, fresh |

Procedures:
| 1 | Slice the two large tomatoes. Remove the seeds and slice into half-inch cubes. | | 2 | Saute onions and garlic in olive oil. | | 3 | Add the tomato paste. | | 4 | Add the tomato concasse and chopped basil leaves. | | 5 | Bring to a boil and season with salt and pepper. | | 6 | Reduce heat and simmer for 10 minutes. | | 7 | Blend with a small hand blender. | | 8 | Stir in cream and gin. | | 9 | Pour into six soup dishes. | | 10 | Garnish with a spoon of sour cream and a basil leaf. |
