Mediterranean Sauteed Squid

Ingredients:
2 lbswhole Squid, cleaned
1 tbspOlive Oil
3/4 cupOnion, finely chopped
1 Garlic Clove, Minced
2 Tomatoes, drained and chopped, italian Style
3 tbspBlack Olives, sliced
1 tbspCapers, drained
1/2 tspDried Oregano Leaves, Crushed
1/4 tspDried Marjoram Leaves, crushed
1/8 tspRed Pepper, crushed
Procedures:
1Cut body of Squid into 1/2 inch thick slices; set aside. Heat olive oil in large skillet; add onion and garlic. Cook and stir until onion is tender.
2Add squid and remaining ingredients. Bring to a boil. Cover; reduce heat and simmer 30 minutes or until squid is tender. Serve over bed of hot cooked orzo pasta or rice, if desired.
