Ingredients:

| lbs | whole Squid, cleaned | | 1
| tbsp | Olive Oil | | 3/4
| cup | Onion, finely chopped | | 1
| | Garlic Clove, Minced | | 2
| | Tomatoes, drained and chopped, italian Style | | 3
| tbsp | Black Olives, sliced | | 1
| tbsp | Capers, drained | | 1/2
| tsp | Dried Oregano Leaves, Crushed | | 1/4
| tsp | Dried Marjoram Leaves, crushed | | 1/8
| tsp | Red Pepper, crushed |

Procedures:
| 1 | Cut body of Squid into 1/2 inch thick slices; set aside. Heat olive oil in large skillet; add onion and garlic. Cook and stir until onion is tender. | | 2 | Add squid and remaining ingredients. Bring to a boil. Cover; reduce heat and simmer 30 minutes or until squid is tender. Serve over bed of hot cooked orzo pasta or rice, if desired. |
