Ingredients:
| 4
| cups | cooked rice, cold | | 2
| cup | small dried anchovies or salty fish flakes | | 16
| tbsp | cooking oil | | 4
| tbsp | chopped onion | | 4
| cup | diced cooked chicken breast | | 2
| cup | cooked, peeled prawns | | 8
| | eggs, beaten | | 4
| tbsp | light soy sauce | | 1
| tsp | sesame oil | | 4
| tbsp | chopped spring onion |

Procedures:
| 1 | Break up rice with fork and set aside. | | 2 | With a little oil, fry dried fish until crisp. Set aside and discard oil. | | 3 | In a wok or frying pan, heat cooking oil and fry the onions for about 20 seconds. | | 4 | Add chicken and prawns and stir-fry for about 2 minutes. | | 5 | Add beaten egg and stir fry until the egg is cooked. | | 6 | Add rice and continue cooking using maximum heat. Mix well. | | 7 | Add soy sauce and sesame oil. Cook for 20 seconds. | | 8 | Add spring onions and cooked anchovies. | | 9 | Mix well and serve. |
