Oriental Salted-Fish Fried Rice

Ingredients:
4 cupscooked rice, cold
2 cupsmall dried anchovies or salty fish flakes
16 tbspcooking oil
4 tbspchopped onion
4 cupdiced cooked chicken breast
2 cupcooked, peeled prawns
8 eggs, beaten
4 tbsplight soy sauce
1 tspsesame oil
4 tbspchopped spring onion
Procedures:
1Break up rice with fork and set aside.
2With a little oil, fry dried fish until crisp. Set aside and discard oil.
3In a wok or frying pan, heat cooking oil and fry the onions for about 20 seconds.
4Add chicken and prawns and stir-fry for about 2 minutes.
5Add beaten egg and stir fry until the egg is cooked.
6Add rice and continue cooking using maximum heat. Mix well.
7Add soy sauce and sesame oil. Cook for 20 seconds.
8Add spring onions and cooked anchovies.
9Mix well and serve.
