Cheese and Red Cabbage Salad

Ingredients:
2 tbspvegetable oil
1/2 small red cabbage, shredded
1 dlwhite or red wine
2 green apple, peeled and quartered
1 tsplemon juice
200 gramsemmental cheese (or preferred) cut in cubes
Sauce:
salt, pepper
a little nutmeg
1/2 tspmustard
2 tbspred wine vinegar
1 tspBalsamico vinegar
6 tbspsunflower oil
1 tbsppistachios, chopped (optional)
Procedures:
1Saute the shredded red cabbage in oil for about 1-2 minutes.
2Deglaze with wine and cook until slightly crunchy. Remove from heat and let cool.
3Mix the cabbage, apples, and lemon juice.
4Add cheese.
5Mix all ingredients for the sauce and pour on salad. Garnish with chopped pistachios if desired.
6You can replace the apples with oranges or even pineapples.
