Hometown Mushroom Bake

Ingredients:
butter for the shape
50 gramssbrinz cheese, grated
100 gramsemmental cheese, grated
1/4 cupchopped chives
30 gramsbutter
2 shallots
2 carrots, diced in small cubes
800 gramsassorted fresh mushrooms (button, chanterelles, etc), chopped
1 dlwhite wine
Procedures:
1Panfry shallots in butter.
2Add carrots and cook for 8-10 minutes.
3Add mushrooms, stir-fry for 4 minutes.
4Add wine, reduce the liquid to half.
5In a baking dish, rub butter to prevent sticking. Place the mushroom mix into the dish.
6Add the grated cheese on top.
7Bake in a pre-heated oven at about 430°F (220°C) until the cheese has melted.
8Remove from oven, top with chives and serve.
