Fish Burgers with Spicy Sauce

Ingredients:
1/2 lbsraspberries
1/4 tspsalt
2 tbspsugar
1 tspchopped garlic
1 tsptabasco sauce
1 tbspshredded lemon peel (dried or fresh)
1 tbspcornstarch
1 lbsfillet of trout or your choice of fish
2 tbspchopped parsley
1 egg
1 egg yolk
2 tbspbreadcrumbs
1 tbspshredded lemon peel (dried or fresh)
2 tbspcooking oil
Procedures:
1Place raspberries in a blender and puree.
2Strain the puree through a cheese cloth, into a saucepan.
3Add salt, sugar, chopped garlic, tabasco, lemon peel and cornstarch.
4Bring to a quick boil, stirring constantly. Remove from heat.
5In a food processor, chop the fish fillet and parsley.
6Transfer to a bowl, then add egg, egg yolk, breadcrumbs and lemon peel.
7Pan-fry in cooking oil for about 3 minutes until golden brown on each side.
8Serve with the raspberry sauce.
