Ingredients:
| 1 1/2
| lbs | pork loin, for roasting | | 1
| tsp | salt, pepper, paprika | | 2
| tbsp | cooking oil | | 1
| lbs | cherries, fresh - seeds removed | | 1
| lbs | shallots | | 2
| tbsp | sugar | | 1
| tbsp | butter | | 2
| tbsp | apple vinegar | | 1/2
| cup | cider |

Procedures:
| 1 | Season the pork loin with salt, pepper and paprika. | | 2 | Pan-fry in cooking oil until golden brown on all sides. | | 3 | Transfer to a baking dish and roast in preheated oven at 375°F for 10-15 minutes. | | 4 | Peel and cut shallots into quarters. | | 5 | In a sauce pan, caramelize the sugar over low heat. | | 6 | Add the butter, then the shallots. | | 7 | Add the vinegar and cider and simmer over low heat for 10 minutes. | | 8 | Add the cherries, mix over low heat for about 2-3 minutes, then remove from heat. | | 9 | Cut the roasted pork into 1/2 inch slices. | | 10 | . Arrange on serving plates and serve with the cherry stew on the side. |
