Roast Pork with Cherry Stew

Ingredients:
1 1/2 lbspork loin, for roasting
1 tspsalt, pepper, paprika
2 tbspcooking oil
1 lbscherries, fresh - seeds removed
1 lbsshallots
2 tbspsugar
1 tbspbutter
2 tbspapple vinegar
1/2 cupcider
Procedures:
1Season the pork loin with salt, pepper and paprika.
2Pan-fry in cooking oil until golden brown on all sides.
3Transfer to a baking dish and roast in preheated oven at 375°F for 10-15 minutes.
4Peel and cut shallots into quarters.
5In a sauce pan, caramelize the sugar over low heat.
6Add the butter, then the shallots.
7Add the vinegar and cider and simmer over low heat for 10 minutes.
8Add the cherries, mix over low heat for about 2-3 minutes, then remove from heat.
9Cut the roasted pork into 1/2 inch slices.
10. Arrange on serving plates and serve with the cherry stew on the side.
