Ingredients:

| lbs | apricots | | 2
| tbsp | lemon juice | | 1
| cup | cider | | 1
| | vanilla pod | | 1/2
| lbs | raspberries |

Procedures:
| 1 | Slice apricots in halves. Remove seeds and cut into 1/2 inch - thick slices. | | 2 | Toss apricot slices in lemon juice. Set aside. | | 3 | In a sauce pan, heat cider to boil. | | 4 | Add vanilla pod into the cider and simmer for about 10 minutes. | | 5 | Remove vanilla pod, and pour the cider in the bowl with apricots. Set aside and let cool. | | 6 | Arrange in serving cups with raspberries. garnish with mint leaves. |
