Dark Chocolate Mousse

Ingredients:
3/4 cupbutter
1 1/2 cupcocoa
1 cupheavy cream, chilled
6 xeggs
1 1/4 cupwhite sugar
2 tbspstrong coffee
Procedures:
1Melt butter in a sauce pan. Stir in cocoa and mix well until smooth. Set aside to cool.
2Whip heavy cream in a steel or glass bowl until stiff. Set aside.
3Separate egg yolks and egg whites.
4In a large bowl, beat egg whites with half of the sugar until stiff.
5In a large bowl, beat egg yolks with the other half of the sugar until light and fluffy. Fold in the cocoa - butter mixture.
6Gently fold in the egg whites, and then fold in the whipped cream.
7Spoon into serving cups and chill overnight.
8Remove from refrigerator about 20 minutes before serving. Garnish with whipped cream and chocolate flakes if desired.
