Ingredients:
| 3/4
| cup | butter | | 1 1/2
| cup | cocoa | | 1
| cup | heavy cream, chilled | | 6
| x | eggs | | 1 1/4
| cup | white sugar | | 2
| tbsp | strong coffee |

Procedures:
| 1 | Melt butter in a sauce pan. Stir in cocoa and mix well until smooth. Set aside to cool. | | 2 | Whip heavy cream in a steel or glass bowl until stiff. Set aside. | | 3 | Separate egg yolks and egg whites. | | 4 | In a large bowl, beat egg whites with half of the sugar until stiff. | | 5 | In a large bowl, beat egg yolks with the other half of the sugar until light and fluffy. Fold in the cocoa - butter mixture. | | 6 | Gently fold in the egg whites, and then fold in the whipped cream. | | 7 | Spoon into serving cups and chill overnight. | | 8 | Remove from refrigerator about 20 minutes before serving. Garnish with whipped cream and chocolate flakes if desired. |
