Ingredients:
| 2
| lbs | pork loin (for roasting) | | 1
| cup | orange marmalade | | x | salt and pepper | | 1 1/2
| cup | chicken or pork stock | | 1/4
| cup | white wine | | 2
| tbsp | fresh cream | | 2
| tbsp | butter | | 2
| tsp | chopped orange zest | | 1
| tsp | dried rosemary or thyme (optional) | | 1
| tsp | cornstarch, mixed with a little water |

Procedures:
| 1 | Preheat oven to 400 F (or 200 C) | | 2 | Season the pork loin with salt and pepper. Use one-half of the marmalade to coat the pork. | | 3 | Wrap the pork in aluminum foil, then place on a baking dish. Roast in the oven for about 50 - 70 minutes, depending on the thickness of the pork. | | 4 | Combine stock, wine and the other half of the marmalade in a sauce pan, heat until boiling. | | 5 | Add butter, cream, orange zest and rosemary, then let it reduce for 8-12 minutes, until it tastes just right. | | 6 | Add cornstarch and cook for 2-3 minutes until the sauce has thickened. Add more cornstarch if necessary. | | 7 | Cut roast pork into thin slices. Arrange on a serving dish, then pour sauce over the pork slices. | | 8 | Garnish with parsley and additional orange slices if desired. |
