Roast Pork a l'Orange

Ingredients:
2 lbspork loin (for roasting)
1 cuporange marmalade
xsalt and pepper
1 1/2 cupchicken or pork stock
1/4 cupwhite wine
2 tbspfresh cream
2 tbspbutter
2 tspchopped orange zest
1 tspdried rosemary or thyme (optional)
1 tspcornstarch, mixed with a little water
Procedures:
1Preheat oven to 400 F (or 200 C)
2Season the pork loin with salt and pepper. Use one-half of the marmalade to coat the pork.
3Wrap the pork in aluminum foil, then place on a baking dish. Roast in the oven for about 50 - 70 minutes, depending on the thickness of the pork.
4Combine stock, wine and the other half of the marmalade in a sauce pan, heat until boiling.
5Add butter, cream, orange zest and rosemary, then let it reduce for 8-12 minutes, until it tastes just right.
6Add cornstarch and cook for 2-3 minutes until the sauce has thickened. Add more cornstarch if necessary.
7Cut roast pork into thin slices. Arrange on a serving dish, then pour sauce over the pork slices.
8Garnish with parsley and additional orange slices if desired.
