Banana Fritters Flambe

Ingredients:
4 largebananas
3 tbspflour
1 eachegg yolk
1 tbspcooking oil
1 tbspconfectioner's sugar
1 pinchsalt
2 tbsprum
1/3 cupwater
Procedures:
1Mix the egg yolk, flour, oil, rum, confectioner's sugar, salt, and water. Set aside for 2 minutes.
2Peel the bananas and slice in half - lengthwise.
3Coat the banana slices in the rum batter, then deep fry in hot oil for about 2-4 minutes, until golden brown. Arrange in a serving dish. Top with a little powdered sugar, if desired.
4In a small sauce pan, bring a cup of rum to a boil. Light it up to make a flambee, then pour the flaming rum on the banana fritters. Serve immediately.
