Roast Veal with Sauteed Corn Kernels

Ingredients:
8 lbsveal loin (for roasting)
2 tspcooking oil
xsalt and pepper
1 largecanned corn kernels
2 tbspbutter
1 tspdried chili peppers
Procedures:
1Preheat oven to 400 F.
2Season veal with salt and pepper, then pan fry over high heat with oil just to sear - about 2-3 minutes.
3Transfer to a roasting pan, then roast in the oven for about 40 - 60 minutes, until cooked.
4Panfry corn kernels and dried chili peppers in butter. Season with salt and pepper.
5Arrange roast veal on the center of a serving dish, then surround with sauteed corn kernels.
