Roast Veal with Cream and Paprika

Ingredients:
| 1
| large | veal fillet for roasting (abt 2 lbs) | | 2
| tbsp | paprika | | 1/2
| cup | white wine | | 4
| tbsp | butter | | 1
| cup | cream | | x | salt and pepper |

Procedures:
| 1 | Preheat oven to 400 F (or 180 C). | | 2 | Season the veal with salt and pepper. Transfer to a greased baking dish. Season generously with 1/2 of the paprika, then coat well with butter. | | 3 | Let the veal roast in the oven for 60 - 90 minutes, until medium-well. | | 4 | Turn off the oven and remove the roast veal. | | 5 | Transfer the drippings to a small sauce pan. Add the wine, mix and bring to a quick boil. | | 6 | Stir in the cream and the other half of paprika. Let it simmer for 1-2 minutes. Season with salt and pepper and thicken with some cornstarch diluted with water, if desired. | | 7 | Pour sauce at the bottom of a large serving dish. Place roast veal at the center, then surround with steamed rice and green stringbeans. |
