Ingredients:

| x | lamb's brain (fresh or frozen) | | 4
| tbsp | butter | | 1
| tsp | green peppercorns | | 1
| x | lemon | | 1
| x | bay leaf and clove | | 1/4
| x | small onion - no need to chop | | x | salt, vinegar, parsley |

Procedures:
| 1 | NOTE: Kids - don't try this at home! | | 2 | Immerse the lamb's brain a bowl filled with cold water and 2 tbsp vinegar - this will leech away the blood. Remove and drain - cut off the filaments at the bottom if necessary. | | 3 | Put the brain in a small pot, with the salt, 2 tbsp of vinegar, onion, bay leaf and clove. Cover with water, then bring to a boil. | | 4 | Once it boils, put out the heat and leave the brain in the pot to cool in its *stock*. | | 5 | Remove the brain, then transfer to a serving dish. | | 6 | Add a tablespoon of melted butter, then heat in a microwave before serving. | | 7 | SAUCE: Melt butter over medium heat in a small sauce pan. Add the green pepper corns, saute for a minute, then add a tablespoon of fresh lemon juice. | | 8 | Serve the *vampire's brain* with the peppercorn - butter sauce on the side. |
