Ingredients:
| 2
| large | fresh lobsters | | 1/2
| cup | butter - softened | | 2
| tbsp | lemon juice | | 1/4
| cup | finely chopped herbs (chives, tarragon, dill) | | x | salt and cayenne pepper |
|
Procedures:
| 1 | Plunge the lobsters in a large pot of boiling salted water or court bouillon. Cook for 1-2 minutes, until the lobster's color has turned bright red / pink. | | 2 | Remove from the pot, then use a large knife to cut through the lobster to divide it into 2 parts. | | 3 | Cook the lobsters over a hot charcoal grill - meat on the grill - for about 7 - 10 minutes. | | 4 | Mix together the lemon juice, chopped herbs of your choice, and butter. | | 5 | Turn the lobster over and grill the backside (shell) for about 3 minutes. Brush with the herb-butter mixture. Season with some salt and cayenne pepper, then turn over and grill the meat again for about 2 minutes. | | 6 | Serve with grilled corn and additional herb butter. |
