Ingredients:
| 3
| lbs | beef for stewing - cut in 2-inch cubes | | 1
| tbsp | flour | | 2
| tbsp | cooking oil | | 2
| large | onions, peeled and quartered | | 2
| tbsp | butter | | x | salt and pepper for seasoning | | 1
| tsp | saffron | | 1
| x | bouquet garni | | 1
| can | chick-peas, drained |

Procedures:
| 1 | You'll need a pressure cooker for this recipe... | | 2 | Coat the beef cubes with flour. Heat cooking oil in the pressure cooker, then saute the beef cubes in high heat to sear. Remove the beef from the pot. | | 3 | Melt the butter in the pot, then add the quartered onions and saute for 2-3 minutes. | | 4 | Return the beef cubes, along with salt, pepper, saffron, and bouquet garni. Cover the meat with water, then put on the cover and pressure cook for 30 minutes. | | 5 | Remove the cover, then add the chick peas. Mix and then cover and pressure cook for another 5 minutes. | | 6 | To serve, arrange chickpeas at the bottom of a serving dish, then top with beef cubes. |
