Ingredients:
| 4
| x | pork chops | | 2
| large | oranges | | 4
| tbsp | butter | | 1
| tsp | chopped parsley | | 1
| tsp | orange zest | | | salt and pepper |
|
Procedures:
| 1 | Orange-Butter Sauce: Leave butter under room temperature for about an hour to soften. Mix in the orange zest and chopped parsley. Season with salt and pepper to taste and set aside. | | 2 | Wash the oranges. Grate the peel to make fresh orange zest, and squeeze out the juice. | | 3 | Marinate the pork chops in orange juice with its zest (grated peel) for about one hour. | | 4 | Season pork chops with salt and pepper, and rub both sides with a little of the orange-butter mixture. Cook over a charcoal gril for about 8-10 minutes on each side, until cooked. | | 5 | Arrange pork chops on serving plates. Garnish with a slice of orange on top, and serve with orange-butter on the side. |
