Ingredients:

| tbsp | cooking oil | | 1
| lbs | beef, cut into cubes for stewing | | 3
| large | onions, peeled and thinly sliced | | 1
| tsp | flour | | 1
| tbsp | vinegar | | 1
| tbsp | chopped parsley | | 1
| | bay leaf | | 1
| tsp | thyme | | 2
| cups | beer | | 1
| tbsp | brown sugar | | 3
| tbsp | Dijon Mustard |

Procedures:
| 1 | In a skillet, heat cooking oil over medium heat. | | 2 | Add beef to skillet in batches (do not crowd) and cook until well browned on all sides, turning with spatula. | | 3 | Transfer meat to heavy 2 to 3 quart saucepan. | | 4 | Add onions to skillet reduce heat slightly. Cook until deep golden brown about 10 minutes, stirring occasionally. | | 5 | Blend in flour and cook about 30 seconds, watching carefully so flour does not burn. | | 6 | Add beer and stir, scraping up browned bits. | | 7 | Bring mixture to boil, then pour over beef. | | 8 | Blend in vinegar, mustard, sugar, parsley, bay leaf and thyme. | | 9 | Cover saucepan and simmer for about 1 hour, stirring occassionally, until the meat is cooked. | | 10 | Remove bay leaf and discard. | | 11 | Serve with green salad, potatoes, and beer. |
