Ingredients:

| lbs | pork loin (for roasting) | | 1/2
| lbs | prunes, dried/ seedless | | x | salt, pepper, cooking oil | | 1/2
| cup | white wine |

Procedures:
| 1 | Ask your local butcher to make an incision in the center of the pork loin for stuffing. | | 2 | Preheat oven to 400 F. | | 3 | Stuff the center of the pork with half of the prunes. Season pork with salt and pepper, then rub with oil. | | 4 | Transfer pork to a baking dish, then roast in the oven for 60 - 90 minutes, until meat is well cooked. | | 5 | In a small sauce pan, heat wine until simmering, then add the rest of the prunes. Simmer for about 5-10 minutes, then remove from heat. Drain. | | 6 | When cooked, arrange pork in serving dish. Transfer the drippings / juice to a sauce cup. Surround with the marinated prunes. Serve with the roast drippings on the side. |
