Ingredients:
2 lbsbeef (sirloin) for roasting
xsalt and pepper
1 tbspcooking oil
Procedures:
1Preheat the oven to 400 F.
2Season the beef with salt and pepper.
3Quickly pan-fry the beef in cooking oil, making sure all sides are cooked for about 1-2 minutes to ''seal the pores''.
4Transfer to a oven-proof dish, then roast in the oven for 10 - 15 minutes.
5Transfer to a serving plate, then slice and serve with potatoes and vegetables.
