Ingredients:
| 1 1/2
| lbs | potatoes | | x | salt | | 2
| tbsp | chopped parsley | | 1/2
| lbs | bacon, sliced into 1/2 inch strips | | 1
| large | onion, peeled and chopped | | 1
| cup | white wine | | 2
| tbsp | white wine vinegar | | x | salt and pepper to taste |

Procedures:
| 1 | Boil the potatoes in salted water for about 30 minutes. | | 2 | In a frying pan, saute the bacon over medium heat for about 2-3 minutes. Remove bacon from pan, drain on paper towels. | | 3 | In the same pan, saute the chopped onions for 2 minutes. | | 4 | Add the wine and vinegar and simmer for 2 minutes. | | 5 | Season with salt and pepper. | | 6 | Peel and cut the boiled potatoes to make 1/2 inch slices, then transfer to a salad bowl. Add the chopped parsley and bacon. | | 7 | Add the sauce and mix carefully, make sure that the potatoes do not crumble. | | 8 | Serve warm. |
