Ingredients:

| x | fish fillets (1/3 lb each) | | 2
| tbsp | flour | | x | salt and pepper | | 2
| large | leeks | | 2
| tbsp | butter | | 1
| tsp | sugar |

Procedures:
| 1 | Clean and peel the leeks. Separate the white part from the green. Cut the white part of the leeks into 1/2 inch slices. | | 2 | Cut the green part of the leeks into julienne strips. Blanch in boiling water, then set aside for garnish. | | 3 | In a small saucepan, melt the butter over medium heat. Add sugar and sliced leeks, then saute for about 2 minutes. | | 4 | Cut fish fillets to make 1-inch slices. Season with salt and pepper. Coat with flour, then panfry for 3 - 5 minutes, until cooked. | | 5 | Arrange fish cutlets and buttered leeks on serving plates. Serve with buttered flat noodles and Hollandaise sauce on the side. | | 6 | Garnish with leeks julienne. |
