Ingredients:

| | Leg of lamb * | | 2
| oz | Feta or Kasseri (or more) | | 1
| tsp | Thyme | | 1
| tsp | Spearmint flakes | | 1
| tsp | Oregano | | 2
| | Garlic cloves | | 2
| | Lemons, juice only | | 1
| tbsp | Salt | | | Pepper to taste |

Procedures:
| 1 | *note: lamb shanks may be substituted for leg of lamb. | | 2 | Wipe meat with damp cloth. | | 3 | Make incisions with small sharp knife on all sides of leg or shanks. | | 4 | Insert pieces of garlic clove and cheese. | | 5 | Rub with lemon juice. | | 6 | Sprinkle with herbs, salt and pepper. | | 7 | Wrap securely in heavy paper twice. | | 8 | Use greaseproof paper such as cooking parchment or oil brown paper. | | 9 | (do not use aluminum foil. | | 10 | It prevents browning). | | 11 | Tie with string. | | 12 | Bake a leg for 2 ?hours in 350°F oven. | | 13 | Bake 2 hours if using shanks |
