Lamb cutlets in aromatic coffee sauce

Ingredients:
60 gramsButter
1/3 cupStrong coffee
1/3 cupHoney
2 tbspWorcestershire sauce
1/4 tspMace
1/4 tspCardamom
1/2 tspCinnamon
1/4 tspMixed spice
1/4 tbspLemon juice
30 gramsGhee
6 Lamb cutlets
Boiled rice
Prunes, pitted
Fresh rosemary for garnish
Procedures:
1Melt butter on a low heat, mix in coffee, then honey, worcestershire sauce, spices and lemon juice.
2Cover and remove from heat.
3Melt ghee in a large frying pan, add cutlets and fry until browned on both sides.
4Return sauce to heat, bring to boil and pour over cutlets.
5Serve with boiled rice and pitted prunes, heated through in the sauce, if desired.
6Garnish with rosemary.
