Ingredients:
MARINADE
1 tbspGarlic, finely
-chopped
2 tbspGinger (fresh)
-finely chopped
2 tbspLemon juice
1/4 cupPeanut oil or
-vegetable oil
1/2 tbspTurmeric, ground
1/2 tbspCoriander, ground
1/2 tbspCumin, ground
1/8 tbspCayenne (or
-to taste)
1 tbspOnion, grated
KEBABS
24 Lamb (lean), cubed
-(approx 2 lbs)
2 medOnions, cut into
-large chunks
2 Green peppers, cut
-into large chunks
2 Tomatoes, cut into
-large chunks
Procedures:
1Mix all marinade ingredients in a large bowl.
2Add lamb cubes and marinate for 1 hour.
3Preheat broiler or light the barbecue.
4Divide the meat and vegetables evenly into 4 parts, and skewer the pieces on 4 skewers.
5Place 4 to 5 inches from flame.
6Grill, turning to cook evenly, for approximately 10 minutes.
7Serve with rice and cucumber-yogurt sauce.
8Notes: * this is a fairly spicy lamb shish kebab -- serve it with cucumber yogurt sauce.

10: time: 5 minutes preparation, 1 hour marinating, 10 minutes cooking.
