| lbs | Venison, bite size | | | - Chili grind fine *OR* | | | Chuck, well trimmed, ground | | 1
| large | Onion, chopped | | 2
| | Garlic cloves, minced | | 1
| tsp | Oregano | | 1
| tsp | Cumin seed | | 2
| cup | Hot water | | 6
| tsp | Chili powder | | 1 1/2
| cup | Canned whole tomato | | 2
| dash | Liquid hot pepper sauce | | | Salt to taste |

Procedures:
| 1 | Place meat, onion and garlic in a large heavy skillet or dutch oven. | | 2 | Cook until light colored. | | 3 | Add oregano, cumin, water, chili powder, tomatoes, hot pepper sauce (more or less to taste), and salt. | | 4 | Bring to a boil, lowering heat, and simmer for one hour. | | 5 | Skim off fat during cooking |
