| lbs | Leg of lamb, butterflied | | | Olive oil | | 3
| tbsp | Dried Rosemary | | 1
| | Grated rind of 1 lemon |

Procedures:
| 1 | Paint the lamb with the olive oil. | | 2 | Sprinkle with rosemary and rind. | | 3 | Let sit for several hours. | | 4 | Grill to pink. | | 5 | Slather a few pats od butter on top and slice thinly. | | 6 | Season with salt & pepper to taste |
