Leg roast of venison

Ingredients:
3 lbsLeg roast Elk or Deer
5 Slices salt pork
Onion
Apple
1 tspSalt
1/4 tspPepper
1/4 tspAllspice
2 Sprigs of rosemary
2 Bay leaves
Procedures:
1Cut gashes in roast about 2 inches apart and half through the thickness of roast.
2Place in each gash a slice of salt pork, onion and apple.
3Top with a few more slices of onion.
4Sprinkle roast with spices and herbs.
5Plase meat on a rack in a roasting pan.
6Bake in 300 °F.
7Oven until done, 2 to 4 hours, depending on tenderness of meat.
8Remove herbs before serving.
