Procedures:
Soften the cream cheese by beating well. Stir in the lemon juice, chives,
bacon and seasoning to taste.
Lay a slice of smoked salmon on a flat surface, cut in half and place a
rounded teaspoon of the cheese mixture at one end.
Roll up the salmon to enclose the filling and tie a chive around the
salmon, like a string, to garnish. Serve on a bed of mixed salad leaves
dressed with vinaigrette and garnish or serve with lemon wedges. Makes an
ideal first course.
The salmon rolls may be cut in half before tying with a chive.
