Ingredients:
1 eachHead of garlic, 10-12 cloves
1 eachOnion, coarsely chopped
3 eachChive bunches, chopped
1 eachBell pepper, chopped
1/2 eachRed bell pepper, chopped
1 eachCelery stalk
1 eachHabanero peppers
-More to taste, seeded
1 eachBunch parsley, chopped
-1 tablespoon dried
1 eachBunch thyme, chopped
-1 tablespoon dried
1 eachBunch Marjoram, chopped
- tablespoon dried
1/2 cupLime juice
Procedures:
1Coarsely puree the garlic, onion, bell peppers, celery, chili peppers, chives, herbs and lime juice in a food processor or blender.
2Correct the seasoning with salt and pepper to taste.
3Add lime juice.
4This can be rubbed under the skin of a whole chicken, left to rest in the refrerator for 12-24 hours then roasted.
5It can also be used to marinate pork, fish or shrimp
