Ingredients:
1 eachSMALL ONION
2 eachSMALL CLOVES GARLIC
1 each1" PIECE OF GINGER ROOT
2 tspCRACKED BLACK PEPPERCORNS
1 tspRED PEPPER FLAKES
1 tspCORIANDER SEEDS
1 tspCARDOMOM GRAINS
1 tspFENUGREEK SEEDS - OPTIONAL
1/8 tspCINNAMON
1/8 tspGROUND CLOVES
1/8 tspGROUND ALLSPICE
1 tbspSALT OR TO TASTE
1/3 cupPAPRIKA
1/2 cupOLIVE OIL
1 eachJUICE OF ONE LEMON
Procedures:
1Finely chop the onion.
2Mince garlic and ginger.
3Place onions, garlic, ginger, peppercorns, red pepper flakes, coriander, cardomom, fenugreek, cinnamom, cloves, allspice, salt and paprika in a dry skillet.
4Cook over medium heat for 3 to 4 minutes, or until spices are lightly toasted and fragrant.
5Combine roasted spices, olive oil and lemon juice in blender and puree until smooth.
6Spread paste on meat and marinate overnight.
7Warning!! a little of this spicy mix goes a long way.
8Makes enough marinade for about 2 lbs.
9Of meat.
10(pork, sirloin steak, tuna).
11Note:: fenugreek is a rectangular seed found in indian or middle eastern grocery stores
