Ingredients:
8 Roma Tomatoes, chopped
1/2 cupSweet red pepper, chopped
1/2 cupSweet yellow pepper, chopped
1/2 cupWhite onion, chopped
2 Garlic cloves, minced
8 Basil leaves
1/2 cupExtra-virgin olive oil
Sea salt
White pepper
1/2 lbsAngel hair pasta
Crushed dried hot red pepper
Grated Romano cheese
Procedures:
1Combine tomatoes, red and yellow peppers, onion and garlic with basil and olive oil.
2Season to taste with sea salt and white pepper.
3Cook pasta in boiling salted water until al dente.
4Drain well.
5Place pasta on plate and top with vegetable sauce.
6Serve crushed hot red pepper and roman cheese on side.
7Makes 2 servings as an entree, 4 as an appetizer.
