Ingredients:
2 lbsCABBAGE, SHREDDED
2 smallYELLOW SQUASH, SLICED, small
1/3 cupOIL
15 ozTOMATO SAUCE
6 ozTOMATO PASTE
1/2 cupWATER
1 tspSUGAR
1/2 tspBASIL, DRIED
1/2 tspSALT
1/2 tspPEPPER
2 medTOMATO, CHOPPED, medium
16 ozRICOTTA
4 cupJACK, SHREDDED
2 xEGG, BEATEN
12 xNOODLES, LASAGNE
Procedures:
1Core, trim and shred cabbage.
2Trim and thinly slice squash.
3In a large skillet saute cabbage for 10 minutes in hot oil.
4Add squash and cook an additional 10-15 minutes until vegetables are tender.
5Heat tomato sauce and paste, water, sugar, basil, salt, pepper and tomatoes to boiling.
6Reduce heat and simmer 15 minutes.
7Mix together ricotta and jack cheese with egg.
8Cook noodles as directed.
9Into a 13x9 cheese, cabbage; repeat layers; top with sauce.
10Bake at 350f for 45 minutes.
11Let stand 10 minutes and serve with a cabernet sauvignon
