Lasagne with turkey and fresh tomato sauce

Ingredients:
SAUCE
2 1/2 lbsRipe plum tomatoes -OR-
4 cup-Canned crushed tomatoes
1 tbspOlive oil
2 tbspFinely chopped garlic
1/8 tspHot red pepper flakes
1 tspChopped fresh oregano -OR-
1/2 tsp-Dried oregano
Salt and pepper to taste
LASAGNE
2 tbspOlive oil
2 lbsFreshly ground turkey meat
-OR- ground leftover
- turkey meat
1 tspFinely chopped garlic
1/2 cupDry red wine
1 tspChopped fresh oregano -OR-
1/2 tsp-Dried oregano
Salt and pepper to taste
12 Lasagne strips
2 cupCold water
2 cupRicotta cheese
1/4 cupHot water
1/2 cupGrated Parmesan cheese
2 tbspButter, melted
Procedures:
1To make sauce, core tomatoes and cut them into 1-inch cubes.
2Put tomatoes in food processor and blend until coarsely chopped.
3(there should be about 4 cups).
4Heat 1 tablespoon oil in skillet; add 2 tablespoons garlic.
5Cook briefly but do not brown.
6Add tomatoes, red pepper flakes, 1 teaspoon fresh oregano and salt and pepper to taste.
7Bring to a boil and simmer 10 minutes.
8To prepare lasagne, heat 2 tablespoons oil in non-stick skillet; add turkey.
9Cook, stirring to break up meat, until lightly browned.
10Add 1 teaspoon garlic, stir; add wine.
11Bring to a boil over high heat and cook until wine evaporates.
12Add tomato sauce, 1 teaspoon oregano and salt and pepper to taste.
13Bring to a boil and simmer 5 minutes.
14Meanwhile, cook lasagne in salted water, according to instructions on package, adding lasagne strips one at a time.
15Cook until tender.
16Add cold water to cool.
17Drain, and spread strips one at a time on a damp cloth.
18Lightly grease a 2-quart oblong baking dish.
19Add a layer of lasagne.
20Beat ricotta with hot water to make it spreadable.
21Spread about 1/3 of ricotta over lasagne.
22Spread a layer of meat sauce over ricotta and sprinkle about ?of parmesan cheese over top.
23Continue making layers, ending with a layer of lasagne.
24Sprinkle with remaining permesan cheese.
25Pour melted butter over all.
26Bake in preheated 400°F oven 15 minutes or until lasagne is piping hot and bubbling.
27Makes 4 to 6 servings
