Ingredients:
3 lbsWhite potatoes
1/2 cupChopped yellow onions
1/4 cupFinely minced garlic
1/2 tspSalt
1/2 tspPepper
1/2 tspDry oregano
1/2 tspBasil
1 cupFresh lemon juice
1/2 cupVegetable oil
-Water (as needed)
Procedures:
1Preheat the oven to 400°F.
2In a large baking pan place the peeled and quartered potatoes (add enough potatoes so that they fill the pan up, ?inch from the top).
3Sprinkle on the onions, garlic, salt, pepper, oregano, basil, lemon juice, and vegetable oil.
4Add enough water so that the potatoes are just covered.
5Stir the ingredients together very thoroughly so that everything is well mixed.
6Bake the potato mixture for 45 minutes.
7Carefully stir the ingredients together so that they are re-mixed.
8Bake the potatoes for another 45 minutes, or until they are tender.
9Remove the potatoes with a slotted spoon.
