Ingredients:

| cup | Thickly sliced, pared, apples | | | Water as needed | | | A little lemon juice | | 2 1/2
| cup | Flour | | 2
| tsp | Baking powder | | 3/4
| cup | Butter | | 1 1/2
| cup | Sugar | | | 4 ea Eggs, separated | | 1
| tsp | Cinnamon | | 2
| tsp | Sugar for sprinkling |

Procedures:
| 1 | Put apples into water with lemon juice. | | 2 | Sift flour and baking powder together. | | 3 | Cream butter and sugar until very light, and add the egg yolks to them, one at at time, beating well after each addition. | | 4 | In another bowl, beat the egg whites until stiff but not dry. | | 5 | Lightly fold flour and egg whites alternately into the batter with a wooden spoon. | | 6 | Butter a pan heavily, and dust it with flour and sprinkle with the cinnamon and sugar. | | 7 | Pour the batter over the apples. | | 8 | Bake in a preheated 300°F. oven for 45 min. cool completely before removing the cake from the pan |
