Kounoupithi stifado (cauliflower stifado)

Ingredients:
6 lbsCauliflower
6 smallOnions, white
1 1/4 cupOil
4 clGarlic, split lengthwise
1 tbspTomato paste diluted with:
2 cupWater
1/2 cupVinegar
1/2 tbspRosemary
1 eachBay leaf
6 eachPeppercorns
Procedures:
1Wash the cauliflower and break into flowerets.
2Skin and wash onions; drain.
3Heat the oil in a pot and lightly brown the whole onions.
4Add garlic and cook until golden.
5Add diluted tomato paste, vinegar, resemary, and bay leaf, and cook for 30 min. bring lge.
6Pot of salted water to a boil; add cauliflower.
7Cook for 5 min., then drain and add cauliflower to sauce.
8(add a little water if necessary).
9Add peppercorns.
10Cover pot.
11Simmer until all liquid has been absorbed and only the oil remains (abt.
1230 to 45 min)..
