Ingredients:
500 gramsMacaroni or spaghetti
4 liter-Water
2 tbspSalt
1 tbspOil
3 tbspButter
4 tbspGrated cheese
-(Kefalotyri, Romano or
- Parmesan)
Procedures:
1To cook pasta: bring water to the boil with salt and oil.
2Keep water boiling briskly and put in a handful of pasta at a time.
3Push into the water slowly as the strands soften and curl around the sides of the pan.
4Stir well as each lot is added, then boil briskly, stirring occasionally.
5Cook until just tender - test by biting a piece.
6Drain well in a colander and return to pan in which it was cooked.
7To prepare for serving: melt butter and heat to a deep golden brown ~- do not burn.
8Pour over pasta, add grated cheese and toss well to coat strands.
9Serve extra grated cheese in a bowl.
