Ingredients:

| grams | Macaroni or spaghetti | | 4
| liter | -Water | | 2
| tbsp | Salt | | 1
| tbsp | Oil | | 3
| tbsp | Butter | | 4
| tbsp | Grated cheese | | | -(Kefalotyri, Romano or | | | - Parmesan) |

Procedures:
| 1 | To cook pasta: bring water to the boil with salt and oil. | | 2 | Keep water boiling briskly and put in a handful of pasta at a time. | | 3 | Push into the water slowly as the strands soften and curl around the sides of the pan. | | 4 | Stir well as each lot is added, then boil briskly, stirring occasionally. | | 5 | Cook until just tender - test by biting a piece. | | 6 | Drain well in a colander and return to pan in which it was cooked. | | 7 | To prepare for serving: melt butter and heat to a deep golden brown ~- do not burn. | | 8 | Pour over pasta, add grated cheese and toss well to coat strands. | | 9 | Serve extra grated cheese in a bowl. |
