Ingredients:
Eggplants
Cracker meal
Oil for frying
THE MIXTURE
1 1/2 cupBread crumbs
2 ea Eggs
1/2 cupKefalotiri cheese, grated OR
1/2 cupParmesan cheese, grated
1 tbspBaking powder
2 tbspParsley, chopped
1 tspOnion, chopped
Salt & pepper to taste
Procedures:
1Wash the eggplants and pierce in several places with a fork.
2Boil in lightly salted water until tender; drain well.
3Remove skin and mas the pulp; measure it.
4Mix 2 c. of eggplant pulp with the amount of ingredients listed above and blend well.
5Shape into croquettes or patties.
6Roll in cracker meal, and fry until golden brown
