Ingredients:
2 cupFlour, whole wheat
1 1/2 cupPeas, shelled, boiled &
-mashed
2 tsp-Salt
2 tbspLime juice
1 cupMint, fresh, or coriander
-leaves (cilantro), chopped
2 tbspGhee, or oil
1/2 tspPepper
-Water for kneading
Ghee, or oil for frying
Procedures:
1Sift whole wheat flour with salt.
2Rub in 2 tbsp ghee or oil.
3Add mashed peas.
4Mix thoroughly.
5Add pepper, coriander or mint with lime juice.
6Knead well.
7Divide into 8 equal portions.
8Shape them into round balls.
9Roll each ball on a floured board into a circle.
105" (12 cm) diameter.
11Lift each roti carefully with floured hands.
12Place on a hot griddle one at a time.
13Shallow fry with 1 or 2 tbsp ghee or oil until both sides are well cooked
