Ingredients:
2 Egg
1 cupCarrot
1 cupSugar
1 cupZucchini
2/3 cupOil
1/4 cupShredded coconut
3/4 cupFlour
1 tbspBaking powder
1 tbspBaking soda
1 tbspCinnamon
3/4 tbspSalt
CREAM CHEESE ICING
1 packCream cheese
1/4 cupButter
1 tbspOrange rind
2 cupIcing sugar
1 tbspVanilla
Procedures:
1Cake: preheat oven to 350°F.
2Grease & flour 9" pan.
3Beat eggs with sugar till frothy.
4Gradually beat in oil.
5Combine dry ingredients, add to 1 st mixture in large bowl & beat together till mixed (batter will be thick).
6Add carrots, zucchini & coconut.
7Beat.
8Pour into pan.
9Bake at 350f for 30 min. frost when cool.
10Icing: beat cream cheese (room temp) & butter together till creamy.
11Beat in icing sugar, vanilla & orange rind till creamy. spread
