| tbsp | Salt | | | CREAM CHEESE ICING | | 1
| pack | Cream cheese | | 1/4
| cup | Butter | | 1
| tbsp | Orange rind | | 2
| cup | Icing sugar | | 1
| tbsp | Vanilla |

Procedures:
| 1 | Cake: preheat oven to 350°F. | | 2 | Grease & flour 9" pan. | | 3 | Beat eggs with sugar till frothy. | | 4 | Gradually beat in oil. | | 5 | Combine dry ingredients, add to 1 st mixture in large bowl & beat together till mixed (batter will be thick). | | 6 | Add carrots, zucchini & coconut. | | 7 | Beat. | | 8 | Pour into pan. | | 9 | Bake at 350f for 30 min. frost when cool. | | 10 | Icing: beat cream cheese (room temp) & butter together till creamy. | | 11 | Beat in icing sugar, vanilla & orange rind till creamy. spread |
